WHEN ITS TIME FOR GREASE PUMP-OUT

Often, busy restaurants are unaware that a pump-out or cleaning is required until it is too late. It can be difficult to keep track of the proper time to plan a cleaning because a restaurant’s pump-out and cleaning schedule is dependent on a variety of parameters, including trap size, seating capacity, business, and cooking processes.

However, you’ll need to use the 1/4th rule to figure out if it should be one or three. This rule indicates that a pump-out is required once 1/4th of your grease trap has been loaded with fats, oils, grease, and solids (FOGS). Once your trap is 1/4 filled, it will no longer be functional, resulting in unpleasant odors, poor sink drainage, and blockages in your lines. Restaurants are frequently compelled by law to clean their grease traps every 90 days. As a result, in addition to the 1/4th rule, your restaurant should be aware of any local government legislation or restrictions. These can differ by city, town, or county, so check to see if your restaurant complies with local regulations. Fines may be imposed if certain requirements are not followed.
